Healthy Apple Oats

I am a dessertasarus! This is someone that loves and mows down any dessert within eyeshot. As such, I go on the front foot and try to prepare healthy desserts before I am tempted by the sugar-filled ones.

This one here is an example - Healthy Apple Oats. 

There is ZERO added sugar in this recipe so all that you are getting is that from the apples. The flavour comes when the apples stew and are combined with two of my favourite spices and a splash of vanilla extract. 

When I enter the chill zone at night and sip on herbal tea, this is the perfect accompaniment. A dollop of low-fat yoghurt and your night ends on a very content note!

Home-Made Nut Granola

As we come into summer, we start to move away from hot breakfasts. I always find my hunger drops when it's hot and that's the main reason I tend to be leanest at that festive end of the year! That's despite the beers!

Blackened BARRA - Proper Man Meal!

I'm totally on a fish bender right now. A 'fish mish' if you will! I don't know what's behind it but with such incredible access to seafood in Australia, I invite you to join me by trying this recipe. 

This one, Blackened Cajun Fish, I first came across when I was in the Caribbean two years ago on an island called Turks and Caicos. Being an island and having a ready supply of fresh seafood, blackened fish was the speciality. 

Blackening seasoning gives a spicy, smokey favour to food and can be used on any meat or vegetables. The recipe may vary between cooks but generally contains thyme, oregano, onion and garlic powder, paprika, cayenne pepper, black pepper and salt. 

I find cooking with a cast iron skillet on medium to high heat gives best results, creating an outer spicy crust and a deliciously, tender and juicy centre. Ohhhh man, I get mouth-waters just thinking about this. Topped with a squirt of fresh lime and paired with some brown or wild rice, there is simply nothing better. 

Once you've made up the blackening seasoning, feel free to store the excess for later. Fish one night, steak the next...

Salmon Got Speared

I've grown up in a family that eats seafood on a frequent basis. Some of my fondest memories are of Dad taking my brother and I fishing as kids. We'd go out for 5-6 hours and have an absolute ball, whether we caught fish or not. I can also remember Dad going absolutely bananas when our lines got tangled... haha! He hated that but he's calmed down is his old age!

That childhood experience of fishing with the old man gave me an appreciation of two things:

  1. The opportunity we have to be able to source fresh, healthy seafood from our own means and the importance of preserving that opportunity by paying attention to size and quantity quotas. 
  2. That cooking seafood need not be hard at all. While we may pay hundreds to eat at a flash seafood restaurant, often you can cook a fillet of fish at home that is just as delicious, for a fraction of the cost. 

This recipe is an illustration of this. Could it not be any simpler to prepare a healthy, delicious dinner? I think not. 

Salmon is well known as a fantastic protein food to include on a weekly basis. It's heathy fat profile makes it great for the heart and when prepared properly, it's supportive of healthy weight management. Try this one as a quick meal this week; 20-25 minutes and you're done!

Breakfast or dinner, eggs are my healthy 'go to'. But have you ever thought about the fact that at most cafes, you'll pay around double what it costs you to make them at home? Well this is what inspired me to cook this one. I could either go and pay $20 to have it done for me or have a go at making it at home for an easy, cheap dinner at half the price.
